Not Sloppy Joe
"It’s Savory Jennifer GO friends, I appreciate quick, easy, filling dinners during the school year. It is a challenge when my kids and I eat vegetarian, but I have a child who likes meat and needs to eat meat (for growth and to fill his belly up), and I understand the value in it for him. So, now and again we compromise. This is one of those times.
I drained and rinsed a can of black beans well. I put that in a skillet with GO-On Tap roasted chili and splashed GO-On Tap Persian Lime. I mashed the beans with a jar of pimento peppers. I added thawed peppers and onions, cumin, and granulated garlic. I then took ground beef and sauteed in a skillet, added oregano, savory herb, black pepper, and a pinch Maldon salt. Once that was cooked, I added the bean mixture to it. I added some bbq sauce and crushed tomatoes and let it all simmer to meld the flavor. A little splash of half and half mellowed the heat, shredded sharp cheddar melted in, finishing this to perfection. I had cubed avocado and scallions to add over the top for serving. Serve this over lime rice, as my son did, or put on an open-faced bun or wrapped in a soft tortilla for a good start to a very filling dinner. Sit. Eat. Smile."
